recipe: Chocolate coconut walnut macaroons

 Katie and I did some baking on Wednesday! We made snickerdoodle cookies (perfect for Santa to dip in his milk), truffles, and amazing chocolate coconut walnut macaroons. They were my favorite so I'm sharing the recipe (from the Taste of Home Cookies cookbook)!
Also, while we were baking, this may or may not have happened with the mixer ;) haha
Here's how to make the amazing macaroons:
2 cups flaked coconut
1/2 cup finely chopped walnuts (the recipe called for macadamia nuts but we traded. any will do!)
1/3 cup sugar
3 tbsp baking cocoa
2 tbsp all-purpose flour
pinch salt
2 egg whites, beaten
1 tbsp light corn syrup
1 tsp vanilla
4 squares semisweet chocolate (or any melted baking chocolate)
1. Combine coconut, nuts, sugar, cocoa, flour and salt. Add the egg whites, corn syrup and vanilla and mix well.
2. Drop by the spoonful on a greased baking sheet. Bake at 325 for 15-20 minutes or until set and dry to the touch. 
3. Melt the chocolate. Dip the bottom of each cookie in chocolate and place on waxed paper (or tin foil) to dry. We stuck ours in the fridge so the chocolate would harden quickly.
