crockpot cookin' - North Carolina BBQ

lessons from Georgia: When you live here, you have make your own delicious NC BBQ.
... And that's just what we did. Delicious doesn't even begin to describe how amazing it was.
 John had this fabulous idea to make NC BBQ in the crockpot and it was awesome. We actually put the crockpot out on the balcony because it cooks in vinegar and the recipe said your whole house would smell like said vinegar if you didn't cook it outside.
Looks good, doesn't it?
Topped with some bbq sauce and served up next to green beans and corny cornbread muffins. Fabulous.

What you need in the crockpot, cooking for 12 hours:
1 bone in pork shoulder roast. Around 5 pounds.
salt and pepper
1.5 cups apple cider vinegar
...After it cooks for 12 hours, the meat is so tender it's just falling apart...

After it's done cooking, take it out of the crockpot, remove the bones, and strain all of the liquid except 2 cups. With that liquid, mix 2 tbsp brown sugar, 1.5 tbsp hot pepper sauce, 2 tsp cayenne pepper and 2 tsp crushed red pepper flakes. Mix the sauce with the pork and voila! NC BBQ!
