John and I are dog sitting this little lady this weekend! She came over last night and this morning John put her in the bed with me to wake me up, haha. 
Don't worry, I'll have plenty of cute dog pictures to share on Monday I'm sure :)

waffle day

Today was waffle day at work. I ordered a waffle machine that came in yesterday! So I cooked up some fluffy waffles for breakfast :) It was a big hit!

Easter Wreath DIY

 Make your own Easter wreath!
 Here's what you'll need. The eggs and grass are super cheap of course (I bought all pastels because I thought they looked springy!) and I found that wreath frame at Michael's in the floral section for $2. Much less than those styrofoam wreath things they have that are around $8.
 Once your glue gun is heated up, started gluing on the grass. I bought that paper-y kind of grass because I liked the colors but the fun plastic-y grass that you put in Easter baskets would be perfect too. This step requires a lot of glue :)
 All done! I had a few holes I had to fill in.
 After all the grass your heart desires is glued on, then you start adding the eggs!
 Once you've got eggs going all the way around, all that's left to do it tie a pretty ribbon (I used 3 skinny ribbons together) at the top and hang it on your door!

plenty of pins

So on Friday I wanted to share some of my favorite pins from the week. I even thought I could make it a weekly thing and it would be really fun. But then for some reason blogger just kept giving me an error and wouldn't let me post this beautiful little blog post for y'all so the 'plenty of pins' segment is comin' atcha on Monday. But usually it will be a Friday thing. Get excited :)

Happy Monday! How was your weekend?
I can't believe I'm writing this because NC State lost this weekend :( but other than that, this was actually a very good weekend for me in basketball. All of my final four are correct!! Say what?!

recipe: apple crisp

Time for another delicious recipe y'all!
This one is one of John's all time favorites - Apple Crisp

Here's what to do:
Put 10 cups of sliced apples (you can see I left the peelings on because I like it that way) in a baking dish. Then mix together 1 cup of white sugar, 1 tbsp all-purpose flour and 1 tsp cinnamon and sprinkle over all of the apples. Pour 1/2 cup of water over the apples next.
 Now it's time to make the topping!
Combine 1 cup oats, 1 cup all-purpose flour, 1 cup brown sugar, 1/4 tsp baking power, 1/4 tsp baking soda and 1/2 cup melted butter. Crumble it over the apples. Of course you'll have to taste test it first just to make sure the topping is delicious enough ;)
 Bake at 350 degrees for about 45 minutes!
 Top with ice cream and devour!
 A few sprinkles are always a nice touch too. Even if they are Valentine's sprinkles :)

How was your weekend?? What's that you say? It's already Wednesday and I'm just now posting about the weekend? Yea yea. I'm behind :) Our weekend was a lot of fun but I didn't take many pictures. Here are just a few snapshots!

crockpot cookin' - North Carolina BBQ

lessons from Georgia: When you live here, you have make your own delicious NC BBQ.
... And that's just what we did. Delicious doesn't even begin to describe how amazing it was.
 John had this fabulous idea to make NC BBQ in the crockpot and it was awesome. We actually put the crockpot out on the balcony because it cooks in vinegar and the recipe said your whole house would smell like said vinegar if you didn't cook it outside.
Looks good, doesn't it?
Topped with some bbq sauce and served up next to green beans and corny cornbread muffins. Fabulous.

What you need in the crockpot, cooking for 12 hours:
1 bone in pork shoulder roast. Around 5 pounds.
salt and pepper
1.5 cups apple cider vinegar
...After it cooks for 12 hours, the meat is so tender it's just falling apart...

After it's done cooking, take it out of the crockpot, remove the bones, and strain all of the liquid except 2 cups. With that liquid, mix 2 tbsp brown sugar, 1.5 tbsp hot pepper sauce, 2 tsp cayenne pepper and 2 tsp crushed red pepper flakes. Mix the sauce with the pork and voila! NC BBQ!

St. Patrick's Day Treats!

 It's almost St. Patrick's Day!  Time for green snacks and my green high heels :)
This weekend I made green rice krispy treats with sprinkles and I found cute little free printables online to stick in them.
 I tell ya, when I bought this scalloped punch I had no idea how much I would use it! Love it!

ACC Tournament

 This weekend John and I got to go the ACC Tournament!! WooHoo! 
On Thursday we cheered on Clemson as they took on VA Tech. And before the game, all the mascots were hanging out together. Hey Mr. Wuf!
 How cool is that to see them all together?

 For this game we sat up top on the third row. Not bad seats at all!

 Then on Saturday we went to the NC State vs Carolina game!! Wow! 
We had given up on trying to buy tickets to this game because they were soooo expensive so we were watching the first half in the Taco Mac when all of a sudden some people at Taco Mac with tickets offered us theirs. For free. Can you believe that?! We saw the second half of the State game and watched the FSU vs Duke game from the lower level behind the goal. Amazing!
Go Pack!! I can't believe we were the last team to be announced for the NCAA. So nerve racking! I LOVE this video of the team when they found out we were in though - so awesome!
