Key Largo... baby why don't we go?

This weekend, John and I took a whirlwind adventure trip around Florida! We started Friday night in West Palm Beach (where bars stay open until 5am! not that we stayed awake until then but still!) then on Saturday, we drove to Key Largo... Key Largo!!! and went on a boat ride out to the coral reef and went snorkeling! (omg I can't believe I'm even writing that we did all of these cool things!) and then on Saturday night, we drove to Miami and spent the night there and checked out the nighlife and South Beach! Crazytown. Here are fun pictures of Key Largo and our snorkeling adventures. I also took some really pretty underwater snorkeling videos so I'm creating a little movie that I'll share later :)

 We were so excited to get to the reef! It was about 4.5 miles off shore and took about 30 minutes on the boat to get there.

We saw some amazing fish! a rainbow colored one, black and white striped ones and bright blue ones. We also some some gorgeous bright purple coral. At some points the reef was so close to us I thought we might touch it! I can't wait to show you the videos we got :)

 it was such a perfect day! I still can't believe we did it! I'll be a pro at snorkeling before we know it, haha :)

Stephanie' s Bachelorette - Charleston, SC

 This weekend, we celebrated my sister-in-law Stephanie's upcoming wedding with a bachelorette party in Charleston, SC! There was lots of pink, time spent in the sand, and a delicious dinner in downtown Charleston!

recipe: microwave brownie

 Last night I mixed this with a little melted butter and vanilla, topped it with pecans and chocolate chips and put it in the microwave...
turns out, it was a delicious, fudgey brownie!
I found the recipe for this single-serving-make-in-the-microwave-in-under-2-minutes-yummy-brownie on Pinterest (of course!)
 You ought to give it a try the next time you need a little dessert :)

Southland Romeo

a couple of weekends ago, John and I went to the Atlanta Street Food Festival in Piedmont Park to watch out friend Rob play in his band - Southland Romeo. They were amazing! The best part is in their song Rock 'n Roll at 1:20 he sings about Johnny (and his saxaphone) and he's talking about my John! How fun is that? We cheered extra loud at that part! These were a couple of pictures I snapped, but you can hear their music here (and there's a free download of the Rock 'n Roll song) if you'd like :)

Happy Friday Friends!
How's your week been? Only a few more hours 'till we are off work and celebrating the weekend. John and I are going to hang out together in Atlanta this weekend and I couldn't be more excited!! We are going to the Atlanta Street Food Festival for food trucks, Sweetwater and great music. And by great music I mean our friend Rob's band Southland Romeo! They're awesome. recipe: BLT with scrambled egg

Have you ever eaten a BLT with scrambled eggs on it? I have had one for the past 3 nights! It is definitely my favorite summer sandwich. And with the tomatoes being so fresh and juicy (straight out of the garden!) and the lettuce being so crisp and delicious, it's a perfect summer sandwich for lunch or dinner!

recipe: Peanut Butter Pie

John's favorite dessert is frozen peanut butter pie. It really is super creamy and delicious! This year, for his birthday, I made a pie and I made mini pies in cupcakes wrappers topped with oreo crumbles. We were all really impressed with how awesome the mini pies turned out, and since they were frozen, it was almost like eating ice cream. Yum! Here's the recipe, enjoy!
Frozen Peanut Butter Pie with Oreo Crumbles
1 package of cream cheese (8oz)
1 1/2 cups powdered sugar
1 cup milk
1 cup peanut butter
2 (8oz) tubs of Cool Whip
24 cupcake papers
Oreo cookies
1. Mix together the cream cheese and powdered sugar. It helps if you let the cream cheese soften a bit before mixing.
2. Add in milk and peanut butter.
3. Fold in the cool whip!
4. Crumble the Oreo cookies in a zip bag for topping. 
5. Place the cupcake papers in a muffin pan and fill with pie filling. Top with crumbled cookies.
6. Freeze and enjoy!
* If you'd rather just make a pie instead of the individuals, this recipe makes 2 pies in graham cracker crusts.
